Ingredients

  • 1 cupmix vegetables (any available vegetables)
  • 1/2 cupchopped tomato
  • 1/2 cupchopped onions
  • 3 tbspOil
  • 1star anise
  • 1 inchcinnamon stick
  • 2cloves
  • 1bay leaf
  • 1red dry chilli
  • 1 tspmustard seeds
  • 1 tspcummin seeds
  • 6-7curry leaves
  • 2black pepper
  • 1 tspasafoetida
  • 2 tbspGinger garlic and green chilli paste
  • 1 tspturmeric powder
  • to tasteSalt
  • 2 tbspred chilli powder
  • 1 tspgaram masala
  • 1 cupvegetables stock
  • 2 tsplemon juice
  • As neededCoriander for Garnish
  • As neededChapdi for serving

Steps

  1. 1

    Add 3 tbsp oil in a pan, if oil is heat add star aenish, bay leaf, cloves, cinnamon, red dry chilli, cummin, mustard, curry leaves, black pepper then add pinch of asafoetida, chopped onion, gingar garlic and green chilli paste, chopped tomato and mix well.

    Cook for 2-3 minutes and then add boiled vegetables and mix well.

    Then add turmeric, salt to taste, red chilli powder, 1 cup vegetables stock, lemon juice,garam masala and mix well.

    Cook for 4-5 minutes in low flam.
    Take a serving plate garnish with coriander and serve with chapdi and salad.
