Instant jalebi rabari

Mix Flour, cornflour, soda, yoghurt and water to form a smooth and flowing batter but not too loose. It should not drop on it's own from the cone.... That's the consistency needed.

Take 3/4 cup of Sugar and 1/4 cup of water in a saucepan. Boil until sugar dissolves. No need of string consistency. Switch off and add few drops of lemon juice.

Take milk... 1/4 cup of sugar... Add 2 bread slices(without edges)... Mix everything well and boil until it's thick like a Rabari. Add Cardamom powder and sliced almonds. Add few drops of kewra water. Keep aside to cool and refrigerate.

Now heat a pan with enough oil for frying. Take a plastic cover or milk packet cover or a sauce bottle... Fill the jalebi batter into it. When the ghee or Oil is hot... Lower the flame and start squeezing the batter in spiral shape. Make as many you can depending upon your pan. Cook both sides until crisp and a good light brown colour. Take it out and drop in sugar syrup until you make the next batch. Now serve with chilled rabadi
