Super easy! Microwaving the potatoes instead of boiling them reduces time and also the chances of the potatoes becoming too wet before they roast. Throw in whatever herbs you fancy and baked till crispy! We love the slightly charred crispy bits. Smashing the potatoes creates even more crispy bits!!Served with baked salmon and roasted asparagus 🤤🤤

Ingredients

2 Servings
  • 2 poundsbaby potatoes
  • 2 tbspscoconut oil
  • to tasteRosemary and thyme
  • to tasteSea salt

Steps

  1. 1

    Wash baby potatoes. Leave skin intact. Place them in a microwave save bowl and cover with a plate or lid. Microwave on medium (700W) for 8-10mins. Check that potatoes are cooked through.

  2. 2

    Placed potatoes on parchment paper. Smashed with a heavy bottom mug, till they split. Drizzle with coconut oil and sprinkle herbs and sea salt.

  3. 3

    Baked in preheated oven at 220 Degrees Celsius for 20-30 mins till nice and crispy.

    Serving options: Pan-fried salmon and roasted asparagus.
