Korma or Qorma'  is a dish originating in the Indian subcontinent, consisting of meat or vegetables braised with yoghurt (dahi) or cream, water or stock, and spices to produce a thick sauce or glaze.
Korma has it's roots in the Mughlai Cuisine of the Indian Subcontinent. A characteristic Mughal dish, it can be traced back to the 16th century and to the Mughal incursions into the region. The technique covers many different styles of korma. The flavour of a korma is based on a mixture of spices, including ground coriander and cumin, combined with yoghurt kept below curdling  temperature and incorporated slowly and carefully with the meat juices.

Ingredients

45 min - 1hr
5-6 servings
  • 800 gmChicken
  • 500 gmpotatoes
  • 3-4Thinly sliced onions
  • 2Tomatoes thinly sliced
  • 2lemon juice
  • 2 tbspGinger garlic paste
  • 1 tspGaram Masala
  • 2 tspcoriander powder
  • 1 tspturmeric powder
  • 2 tspred chilli powder
  • As neededOil for cooking
  • to tasteSalt
  • Handfulcoriander fresh coriander leaves

Steps

45 min - 1hr
  1. 1

    Cut potatoes in medium sized and Soak it for 30mins.

  2. 2

    Meanwhile marinate the chicken with Little ginger garlic paste and lime juice and keep it aside or refrigerate it for 15-20mins.

    Fry thinly slice Onions till it turns golden brown and crispy.

  4. 4

    Follow the same procedure with Potatoes. Fry untill golden brown

  5. 5

    Now fry the marinated chicken just to get a nice coat over the skin. Do not over cook.

  6. 6

    In a pot add oil and sliced tomatoes cook for 5-10mins till it become mushy.

    Add in ginger garlic paste sauté for couple of minutes. Slow down the flame and add chilli powder, turmeric powder, Coriander powder and Salt. Sauté well till the oil separates from the masala.

    Add in fried potatoes followed by chicken, fried Onions, freshly Chopped coriander leaves and half a cup water. Give it a gentle stir. Let it simmer for 5-10mins, Stirring occasionally. Once done add in lemon juice to balance the flavours give it a mix and remove from the stove.

    Garnish with some Coriander leaves and crispy fried onions. Serve hot with rice or any Indian bread.

    Tips - If anyone do not want add chicken or any meat they can use vegetables. But make sure you fry them well before adding it to the gravy.
