Chhena kheer

Chhena Kheer is a delicious sweet dish loved by people, with sweet tooth. Although , ingredients are same, the way of predation may change in different places.
I have prepared chhena at home and used less milk and sugar ,to make thick kheer, as condensed milk being used . So less sugar added and time was saved, to make the thick kheer/rabdi. But , in any method of preparation, the taste is super.

Steps

Bring to boil 1/2 ltr milk. Add diluted lemon juice to cuddle milk to cheese.

Drain the whey and collect chhena on a strainer. Wash with water to remove lemon sourness.

Heat ghee in a wok,fry the crumbled chhena,sugar, a pinch of salt and cashew, till chenna dries up. Remove to a plate.

Heat, the rest 1/2 ltr milk. Allow to boil for 5 minutes, stirring occasionally.

Add condensed milk and chhena with cashews. Let it cook to get the desired thickness. (nearly 3-4 minutes).

Add cardamon powder and cook for a minute. Chhena kheer is ready to serve. Cool and serve this delicious Kheer.
