Ghevar with rabri

Take a big mixing bowl... add ghee and ice cubes.

Rub in the ice cubes until ghee thickenes.. remove the ice and keep whisking the mixture until fully creamed.

Add in the maida and mix tocobtain a crumbly texture. Add in the chilled milk.

Mix well then gradually add and mix chilled water little at a time.add in the lemon juice mix well.the batter should be very thin and flowing.Set in the fridge for 10 mins. to chill.

Meanwhile heat up ghee (3/4th filled) in a round vessel or frying pan. Pour in a ladle full of batter in the center of hot ghee from some height. After 2 secs again oour in same amount same way. Repeat it 15_20 times for one ghevar. Browning at the bottom indicates ghevar is cooked.

Take it out from ghee. Make all the ghevars. Keep aside.now boil water and sugar...make one string consistency sugar syrup. Stack the ghevars and pour chashni over them.

Now lets make rabri... heat up the milk.. add khoya let it cook a bit.. add sugar, cardomom powder etc and let it simmer on low.. stirring in between until it thickens.let it cool a bit.

Spread it on top of the ghevars. Garnish and serve. ENJOY!!!
