Add ghee to a large mixing bowl. Now add 6-7 ice cubes and whip with a whisk or rub with the fingers.Keep rubbing or whipping until the ghee becomes white, light and fluffy.

Add maida to the creamed ghee and mix, Add chilled milk and mix. Add little water make a thick batter. Whip the mixture well for about 5 minutes.

To the batter, add the lemon juice and the remaining water to the mixture and form it into a thin batter. Now the batter is ready.

Fill a deep saucepan half with ghee.Now heat it on high heat.Pour the 2 tbsp of batter keeping a good distance from hot ghee.the batter will splatter and later the froth subsides.

Repeat 10-15 times
pull the ghevar out once cooked, and drain off the oil or ghee completely.keep aside - 6
Mix 1 cup sugar, 1/2 cup water and cardamom powder in a pan and boil on medium high heat for 5-6 minutes. Pour a drop of syrup on a plate to check. Take it between your thumb and a finger and see if it sticky or not. If you feel stickiness between your fingers forming a single string, then your syrup is ready. Remove it from the heat and let it cool slightly. But don't let it cool completely, we need warm syrup for Ghevar.(And you can check one string consistency like shown in the photo)

Pour the sugar syrup over ghevar.Garnish with chopped nuts and serve.
