Mom’s Mutton Pulao 💕

Ever since I have grown up to my senses, Mutton Pulao is our all time favourite dish, made on every other occasion. Specially because it’s my Dad’s favourite. So my Mom used to make this as a special dish whenever my Dad used to invite his co workers and a few friends every Ramadan.
She has become an expert in this dish.
After my marriage I found out that my husband is also fond of it !! 😁 But the choice of tenderness of rice is different. And ofcourse you can never make another original thing yourself.
She used to pressure cook the stock as she had to manage so many other things as well, but I prefer to openly cook the meat till tender.
So this my version of my Mom’s Mutton Pulao which I also preferred to make when my husband invited his boss’s family last year in Ramadan. I felt very proud when they loved it and appreciated. I felt honoured and that’s when you feel proud of, knowing where your credits go to...

In a big wok add the ingredients for mutton stock and let it cook till the meat is tender. Keep adding water time to time. (or pressure cook)

When the stock is ready and meat is tender, in another wok add oil and onion.

Sauté onions till light brown. Add tomatoes, spices, ginger and garlic, and meat. Mix everything well.

Now add the stock and rice.

Cook on medium flame till most of the water evaporates and bubbles appear.

Now cover with lid, turn the flame to lowest and turn off after 10 mins.

Meanwhile in a mixing bowl add all the ingredients of salad and mix well.

In another bowl add the ingredients of yoghurt and mix well.

Open the lid of wok and mix the rice with light hands from sides.

Dish out and serve hot with prepared salad and yoghurt.
