Ingredients

50 lbs
  • 50 lbspork trim
  • (2) 25 lb packages Todd's fresh bratwurst seasoning
  • 1 quartice cold water
  • 5 lbshigh temp cheddar cheese
  • 32 ozchopped canned jalapenos

Steps

  1. 1

    Grind trim thru coarse plate

  2. 2

    Add seasoning and water to trim and mix for 3 to 5 minutes... do not overmix!

  3. 3

    Grind thru 1/8th inch plate. Add jalapeos and cheese, then mix only until peppers and cheese are evenly distributed

  4. 4

    Stuff into natural hog casings
