Combine all ingredients except fresh herbs and lime juice in a pan.

Cover the pan and simmer on medium-low heat until onion softens.

Uncover and continue cooking until liquid reduces to your liking, stirring occasionally to prevent sticking

Taste and adjust salt and pepper. Add a squeeze of lime for brightness if needed.

Turn off heat and stir in fresh herbs.

Serve with rice and thick yoghurt.
