Ingredients

  • 170 gCooked chicken
  • 60 gOlives, cut in pieces
  • 1 tspCapers
  • 100 mlChicken stock
  • 1Small onion, thinly sliced
  • 2 clovesgarlic or 1 tbsp garlic paste
  • 1/2 tspTurmeric
  • 1 tspGround cumin
  • 1/2 tspDried mint
  • 1/2 tspGround allspice
  • 1/4 tspGround cinnamon
  • 1small Preserved lemon
  • 1/2 tspLime juice
  • to taste Salt and pepper
  • 3 tbspFresh coriander or parsley, chopped

Steps

    Combine all ingredients except fresh herbs and lime juice in a pan.

  2. 2

    Cover the pan and simmer on medium-low heat until onion softens.

  3. 3

    Uncover and continue cooking until liquid reduces to your liking, stirring occasionally to prevent sticking

  4. 4

    Taste and adjust salt and pepper. Add a squeeze of lime for brightness if needed.

  5. 5

    Turn off heat and stir in fresh herbs.

  6. 6

    Serve with rice and thick yoghurt.
