Chicken Cafreal

This is one of the famous chicken preparation of Goa. It is spicy, rustic and tangy in taste. The chicken is roasted first and then cooked in the masala. The taste is just awesome. The original recipe needs the famous Toddy vinegar and rum, but that was not available so I used normal vinegar. Some use tamarind balls instead of vinegar also. It is served with potatoes wedges and onion rings. Eaten with pao a bread available in Goa. You can enjoy it with roti or simple bread. Generally leg pcs is preferred for this recipe.

First take the chicken, give slit to it. Marinate it with salt and lemon juice. Keep it for 30.min. Then make paste of all the ingredients except for potatoes and onion. This is the cafreal masala Marinate the chicken with the cafreal. Keep it at least for 2-3 hrs in the fridge. For best results marinate it overnight

In a pan add butter. Now add the marinated chicken. Now fry the chicken first in high flame then in low flame till it gets the roasted look. Do this by flipping both the sides.

Now when it is roasted. Add water to the remaining cafreal paste and put it in the chicken. Cover and let it cook. Till the chicken is fully cooked and the gravy thickens. At this stage if you have rum can add 1 tbsp of this.

Now take the potatoes cut it into round shape and shallow fry it in butter. Serve the chicken with onion rings and potatoes wedges.
