Today I'm offering a light summer main dish with a delicate flavor, very easy and quick to prepare.

Slice the onion and cut the zucchini into thin chunks. Sauté them with a few tablespoons of extra virgin olive oil in a large pan.

When the vegetables have softened, add the salmon and let it cook for 1 minute. Add the parsley, adjust the salt and pepper, and turn off the heat.

Cook the black rice in plenty of salted water. When there are two minutes left in the cooking time, return the pan to the heat and let it warm up. Add the rice, not completely drained, and finish cooking in the pan, stirring to let the flavors blend.
