A simple yet delicious pasta dish, perfect for summer.

After shelling the pistachios, place them in a food processor and chop them. Set aside a small amount of chopped pistachios for garnishing the dish. Then add the Parmesan cheese, two tablespoons of olive oil, and black pepper. Blend everything together to make the pistachio pesto.

Boil water for the pasta, reserving a little of the cooking water.

Once the pasta is cooked, transfer it to a skillet with the pistachio pesto and mix well.

Serve the pasta and top with burrata and the reserved chopped pistachios.
