Roasted Red Pepper Chicken 🐔 Thighs

Ingredients

  1. 1large pack chicken thighs (bone in, skin on)
  2. 2onions, sliced
  3. 1green pepper, sliced
  4. 1/8 teaspoonblack pepper
  5. 1/4 teaspoonGoya adobo
  6. 6 clovesgarlic, minced
  7. 1 can (15.5 ounce)Goya black beans, undrained
  8. 1 can (14.5 ounce)diced tomatoes, undrained
  9. 1 jar (11.5 ounce)Goya pimientos, (roasted red peppers) drained, cut into strips

Cooking Instructions

    Rinse and pat dry your chicken thighs.......

  2. 2

    Place thighs in a large baking pan.......

  3. 3

    Place your sliced onions and green pepper all around chicken thighs.......

  4. 4

    In a bowl combine: black pepper, adobo, minced garlic, Goya black beans and diced tomatoes......

  5. 5

    Pour black bean / diced tomato mixture evenly all over chicken thighs......

  6. 6

    Place your sliced Goya pimientos all over chicken thighs......

  7. 7

    Bake thighs, uncovered, in a preheated 400 degree oven for 1 hour.......Baste chicken thighs with drippings when done..... 🤩😋

  8. 8

    Serve with your favorite side dish and enjoy 😉!! I served mine with chicken flavored parsley white rice 🍚!!!
