In a bowl mix chicken pieces with lemon juice and salt; set aside in the refrigerator for 10 minutes.

Grind to a fine paste the 1st set of garlic, ginger, spice powders, yogurt; add this paste to chicken pieces, add oil, mix well and set aside to marinate, (preferably overnight).

When ready to cook, place chicken pieces on a grill, and cook for approximately 10-15 minutes or until thoroughly cooked, turning on all sides and set aside. At this stage you could serve the grilled chicken with a nice bowl of salad

For Masala: in a hot pan on medium heat, add oil, onions, cook until translucent, add ginger/garlic paste, saute for a minute, add tomato paste, tomatoes and cook until tomatoes are soft and mushy, add spices, stir fry until aromatic, you can now add half a cup of water to have slightly runny consistency, bring to a boil and cook on a low heat for about 5-8 minutes.

Meanwhile, in a bowl, mix together cream, warm water and 1 tsp lemon juice to form a thick smooth paste, add this to the paste, stirring constantly, let it simmer for another 5-8 minutes, taste for seasoning, add the grilled chicken, garam masala, you can adjust the consistency, by adding more water, cover, let it simmer for 5 minutes, turn heat off, let it rest for 10 minutes before serving. Enjoy!!
