Ingredients

30 minutes
4 servings
  • 1/2 kgpotatoes
  • 1/2 kgbringals
  • 3Onions Slices
  • 8 clovesgarlic
  • 1 inchginger piece
  • 2tomatoes
  • 3 tbspnyogurt
  • 1/2 cupOil
  • 1 tspSalt (as per taste)
  • 1 tspred chilli powder
  • 1/2 tspturmeric powder
  • 1/2 tspblack pepper powder
  • 1 pinchblack seeds
  • 1 tsproasted crushed cumin
  • 1 tbspnroasted crushed coriander
  • 1/2 tspgaram masala powder
  • 1 tsplemon juice
  • 3,4green chillies
  • Fresh coriander leaves chopped
  • Water as required

Steps

  1. 1

    Wash potatoes and bringals. Peel the skin of potatoes and bringals. Cut them to thin quarter and add them to a bowl filled with water and little salt.

    Add oil to a hot pan, Add onions and fry till golden brown.

    In blender add fry onion, tomatoes, green chillies,garlic cloves and ginger purée it.

    In remaining oil add blended mixture. After that add red chillies powder,turmeric powder,cumin seeds, coriander powder,black seeds,black pepper, salt, garam masala powder and yogurt cook well.

    Cook until the masala begins to leave the sides of the pan.

  6. 6

    Drain the water from potatoes and bringals. Add them to the pan. Sauté well for 2 to 3 minutes. Cover and cook on a medium heat for another 2 to 3 minutes.

  7. 7

    Add water just enough to make a thick gravy. Cook covered on a low to medium flame until the potatoes and bringals are cooked completely.

  8. 8

    Taste the veggies and add 1 tsp lemon juice, more salt, garam masala if needed. Allow to simmer for 2 to 3 minutes.

    Add chopped fresh coriander and garnish with whole red pepper.

  10. 10

    Serve aloo baingan with rice and roti.
