There's a common misconception that in the Middle Ages, it was ground and used to mask the taste of spoiled food, but there's no evidence to support this. Historians believe this is unlikely, as pepper was a luxury item only available to the wealthy, who could afford fresh food. Pepper was introduced to Greece by Alexander the Great. According to legend, Eudoxus of Cyzicus was the first European to bring pepper and other spices to the continent. For centuries, Arabs controlled the spice trade, and after the fall of the Byzantine Empire, Venice became the main distributor, collecting gold to pay the East for pepper and other spices. Pepper was so rare and expensive that it was used as currency during the Middle Ages. Its high value was one reason the Portuguese sought a sea route to the Spice Islands by sailing around Africa. Green peppercorns are completely unripe berries. Unlike other types, they are more often used whole than ground and are harder to find fresh. They are usually sold dried or pickled in vinegar.

Ingredients

Serves 2 servings
  • 1chicken breast
  • 1 jargreen peppercorns (in brine or vinegar)
  • 1/2 cupheavy cream (110 ml)
  • 1/2 cupchicken broth (about 120 ml)
  • Olive oil
  • Salt and black pepper

    Use one chicken breast for two people (use two if you want larger portions). If you don't know how to slice it, ask your butcher to do it for you. Season the chicken slices with salt and pepper. Heat a little olive oil in a skillet and brown the chicken on both sides. Once cooked, remove the chicken and set aside on a plate.

    Green peppercorns, as described above, are usually sold in jars in vinegar and are milder than black pepper. Adjust the amount to your taste. Drain the peppercorns and sauté them for a few minutes in the same oil used to cook the chicken.

    Add as much chicken broth as you like and let it cook for a couple of minutes. Then add the heavy cream and simmer over medium heat.

    Return the chicken slices to the skillet and cook until the sauce thickens, turning the chicken a couple of times so it gets well coated with the sauce.

    Serve immediately while hot, as this dish cools quickly. Enjoy!
