Use up your overripe bananas for this healthy breakfast.
Eat them immediately or freeze them and grill from frozen (I think they’re even better that way!)
Top with fruit, honey or chocolate spread.

Ingredients

10 mins/ and 15 mins to mix
2 people makes about 6 pancakes
  1. 1really ripe banana
  2. 50-75 goats (depending on whether you want thick or thinner pancakes- I use about 60-70g)
  3. 1egg
  4. 1 tbspGreek Yogurt
  5. 1/4 tspBaking Powder
  6. 1/4 tspCinnamon
  7. Pinchsalt (optional)

Cooking Instructions

10 mins/ and 15 mins to mix
  1. 1

Mash the banana, add the oats, cinnamon, baking powder, salt, egg and yogurt. I used a defrosted banana that I’d mashed and frozen.

  2. 2

Whizz the whole lot together with a hand blender then let it stand for 10 minutes. That lets the oats soften a bit and the baking powder starts to work.

  3. 3

Heat a little butter or/and oil in a frying pan and dollop a spoonful of the mixture in. Flatten a bit. I get 3 together in my pan.

  4. 4

Turn over after about 2 minutes to cook the other side.

  5. 5

Serve with your choice of topping. Berries, maple syrup, chocolate spread. I usually have 2 or 3. This makes about 6 pancakes the size of a mug of tea!
