Rinse the rice and soak it in water for 1 hour. Boil the eggs and set aside.

Fry one large onion until golden brown and set aside. Place a pressure cooker on the stove.

Slice the other onion lengthwise and sauté in oil until soft. Add all the spices and sauté until fragrant. Add the soaked rice and water. Cut the boiled eggs in half and gently mix them into the rice. At this stage, you can also fry the boiled eggs before adding them, if you prefer.

Most of my recipes use less oil and frying; here, I have added the eggs just boiled. I also use homemade garam masala instead of whole spices, as not every home has whole garam masala. Just one teaspoon of homemade garam masala gives a wonderful aroma.

Close the pressure cooker lid and cook until you hear 2 whistles, then turn off the heat.

After the pressure releases, open the lid. Your simple egg pulao is ready. Serve with yogurt; here, I served it with mint yogurt. When serving, be sure to top the egg pulao with the fried onions.
