Ingredients

10 minutes
Serves 4 servings
  1. 2.2 lbsripe tomatoes (about 1 kg)
  2. 1/4 cupchopped onion (about 40 grams)
  3. 2 tablespoonschopped green bell pepper (about 30 grams)
  4. 2 tablespoonschopped red bell pepper (about 30 grams)
  5. 1cucumber
  6. 1garlic clove
  7. 3 tablespoonsextra virgin olive oil (about 40 grams)
  8. 2 tablespoonsred wine vinegar (about 30 grams)
  9. Salt
  10. 1 1/4 cupswater (300 ml)
  11. Melon
  12. Croutons

Steps

10 minutes
  1. 1

    Peel the tomatoes and cucumber. Chop all the ingredients and place them in a bowl. Add the seasonings except for the water.

  2. 2

    Blend on high speed for about 4 minutes until smooth. Add the water and blend briefly to combine. Adjust salt to taste and chill in the refrigerator until very cold.

  3. 3

    Before serving, add diced melon and croutons.
