A Sandwich full of Memories

Long, long ago, my Granny was dating a man who used to cook for a bunch of lumberjacks. They would travel abroad while the season for cutting trees was able to be cut.
So in the off season they would come back and all us grandkids were able to see them. In the mornings they would cook us grits, eggs, bacon, sausage, pancakes, and so on. I always loved the eggs and sausage with toast. So I learned that steaksauces tasted amazing with eggs and sausage. Especially when the yolks were runny. Then mopping it up with toast. Except the runny egg yolks this sandwich reminds me so much of those wonderful memories!!!

Ingredients

  • 1/2 poundbulk sausage
  • 4large eggs
  • To tastesalt
  • 1-1/2 tablespoonsmayonnaise
  • 2 slicesItalian style bread
  • To tastesteaksauce I used HP sauce

Steps

  1. 1

    Divide the sausage into thirds. Press till thin rectangles. Fry in skillet till done, them move to the side.

    Beat the eggs and salt them to taste. Do this in batches. Pour just enough egg on hot skillet to form a rectangle. Try to make them the size of the bread slices. Repeat till all are done. Set aside.

    Toast the bread. When toasted add mayonnaise to both slices.

    Then layer in a stack alternating egg and sausage.

    Finish stacking then add Hp steaksauce or whichever steaksauce you want. Serve I hope you enjoy!!!
