One thing that captivated me about Mexico is the passion Mexicans have for their country, their food, and their traditions. Little by little, I'm catching on, learning, and filling my backpack and recipe book with flavors that will stay with me forever. This time, I decided to make my own tlayuda (since I haven't been able to visit Oaxaca yet). Making them is truly an art, and I'm sure I can get better, but I was happy with my first try. Here’s my adventure. I called it 'tlayudita' because it turned out a bit small, but it was just as delicious!

Ingredients

Serves 4 servings
  • 2.2 lbscorn masa (1 kg)
  • 2plastic bags
  • 1large griddle or skillet (I used a paella pan)
  • 7 ozrefried beans (200 grams)
  • 1/4 headgreen cabbage or regular cabbage
  • 10.5 ozOaxaca cheese (300 grams)
  • 10.5 ozMexican chorizo sausage (300 grams)
  • 1/2cooked chicken breast, shredded
  • 1avocado, sliced

    Place the masa between two plastic bags and roll it out very thin. This is important so it cooks through; my first one didn’t cook well inside. I started by flattening it with my hands, then used a small rolling pin. Carefully remove the plastic and place the masa on the hot griddle or skillet.

    Cook on both sides, letting it brown lightly without getting completely crispy. The texture should be between a tostada and a tortilla. At first, flip it occasionally so it doesn’t puff up.

    Warm it a bit more on the griddle, then add all the toppings. Some people also add pork lard, but I didn’t have any. I spread on the refried beans, then added Oaxaca cheese, cooked chorizo, and shredded chicken.

    Finally, top with avocado slices and enjoy!
