Tricolor braided Mathri

It is very popular savoury or dry-snacks item in allover India. There are variety of methods to make mathris of different shapes, flavours, and colors.
Here I have tried three colors in it using beetroot and spinach. And to make it somewhat in healthier form, I used half whole wheat flour with half refined flour. As it's colorful, so kids like to have it.

Par boil the spinach and beetroot in two different bowls. Then strain the excess water from both. And grind saperately to make a smooth puree. Now take 1/2 cup of both mixed flours in 3 different bowls. Add 1 tablespoon of ghee in each bowl. Add salt and 1/2 teaspoon pepper powder in all bowls.

Then form the dough in first bowl by adding beetroot puree as per requirement. Dont use water to form dough. Same way form a dough of spinach puree in second bowl. And in third bowl form a dough of white color with water.

Now roll thin rotis of all 3 colors. Cut rotis in square shape. Then cut thin strips of all square rotis. Now take 1-1 strips of all 3 colors and braid it like doing in pic. Do the same with all strips and all dough.

Now prick them with fork and deep fry them in oil on medium flame till golden brown. Sprinkle red chilli powder and black salt for some extra spicy-tangy taste. Mathris are ready. Store them in airtight container and use within 10-15 days.
