Mix the flour and semolina and bind hard dough by using dough.

Apply little oil and Knead it for 8-10 minutes then let it rest for 30 minutes.

Prepare small ball from the dough cover it with flour and roll out into thin small puris.(or prepare big chapati and cut it into small round puris with mould)

Let it dry for 2 hours with covering it.(as we see panipuriwale. Bhaiya prepare 800-100 puri in bulk and then they deep fry it- it takes around 1-2 hours,this is the reason their puris are crispy)

Take little oil in deep kadhai and heat it - smoky hot

When smoke comes out from oil put 3-4 puris at a time and continues stir it so it will puff out.once it turns brown take it out and same way fry all the puris.

When all the puris cool down keep it into air tight container and enjoy it whenever you want to it panipuri.

Enjoy it with potato masala and tikha meetha pani
