Plant Power "Elevenses" Energy Bars

What do you eat for elevenses? I had a bar that was really similar to this when I was a little girl at nursery and I can clearly remember waiting for "elevenses" - my healthy mid-morning treat! These are great for a grab-and-go bar and for a packed lunch. Great for an energy boost at break-time, although feel free to eat them any time you wish. This is the base recipe but you can shake it up with different combinations of dried and fresh fruits and superfoods for a healthy boost. You might like to try:
Lemon and poppy seeds,
Cocoa and crushed almond,
Matcha and plum
Coffee and pistachio,
Miso and sesame seeds
Cocoa Nibs and Ginger
Beetroot and Blackberry
Carrot and Apple
Courgette and chocolate chip
You can also add chopped fresh fruit and veg but this will shorten the shelf life. You can even dip them in chocolate, date toffee or a yogurt and chia jam topping and a selection of your healthy sprinkles. #mycookbook

Ingredients

30 minutes

  1. 10plump dates
  2. 2 tablespoonsraisins
  3. 100 gground nuts
  4. 75 gPoppy seeds
  5. 4 tablespoonsalmond butter
  6. 4 tablespoonsagave date syrup

Cooking Instructions

30 minutes

    Line a baking tray with baking paper.

  2. 2

    Blitz all of the ingredients together in a blender until the form a stiff ball. If the mixture is too dry and more almond butter and agave syrup. Add your additional flavours and blitz again.

    Press the mixture firmly on to the paper and place on the fridge around half an hour (or the freezer if you are short on time). You can form into ball or cookie rounds if you prefer.

    Slice the mixture into bars and wrap individually in brown paper and tie with string.
