Plant Power "Elevenses" Energy Bars

What do you eat for elevenses? I had a bar that was really similar to this when I was a little girl at nursery and I can clearly remember waiting for "elevenses" - my healthy mid-morning treat! These are great for a grab-and-go bar and for a packed lunch. Great for an energy boost at break-time, although feel free to eat them any time you wish. This is the base recipe but you can shake it up with different combinations of dried and fresh fruits and superfoods for a healthy boost. You might like to try:
Lemon and poppy seeds,
Cocoa and crushed almond,
Matcha and plum
Coffee and pistachio,
Miso and sesame seeds
Cocoa Nibs and Ginger
Beetroot and Blackberry
Carrot and Apple
Courgette and chocolate chip
You can also add chopped fresh fruit and veg but this will shorten the shelf life. You can even dip them in chocolate, date toffee or a yogurt and chia jam topping and a selection of your healthy sprinkles. #mycookbook

Cooking Instructions

Line a baking tray with baking paper.

Blitz all of the ingredients together in a blender until the form a stiff ball. If the mixture is too dry and more almond butter and agave syrup. Add your additional flavours and blitz again.

Press the mixture firmly on to the paper and place on the fridge around half an hour (or the freezer if you are short on time). You can form into ball or cookie rounds if you prefer.

Slice the mixture into bars and wrap individually in brown paper and tie with string.

My boyfriend he's always spending money on nakd bar. He said it better that eatting a chocolate bar. I totally agreed with him but it so expensive. I decided, I will make it for him. I look at an ingredient, it so simple and easy to find stuffs. I double a recipe I created of, I think it will work and a few reserch. It cost me £6.50 for 20 bars. If I buy for the same amount, it will cost me £15!!! The result is he getting healthy, I get a muscles :D win win Palmy -

This recipe is packed full of both quick and sustained energy for a convenient grab and go breakfast or pick me up snack.It is very adaptable. I like to make with chopped macadamias, hazelnuts, almonds, cashews, pepitas, sunflower seeds, and sesame seeds. I've also added cacao nibs. Whatever I have in pantry. For fruit I like to use cranberries and raisins but is fun to try different variations.The final bars can be a little crumbly, depending on the mix, so we keep in the freezer and they are best when eaten straight away, without thawing. I always wanted to try to make protein bars. They are very easy to grab and go. Here is how ended up with. (If you don’t have almond meal you can make your own with pulsing whole almonds in a food processor until get crumbly texture has formed. Do little pulses, do not use processor continuously , unless you want almond “butter”) Choose your own ingredients , I don’t like chocolate very much , but you can add in the mixture.
