Separate the egg whites from the yolks. Beat the egg whites until stiff peaks form.

Melt the chocolate in a double boiler.

Once the chocolate is melted, add the egg yolks and mix well.

Fold in one-third of the beaten egg whites to loosen the mixture. Then gently fold in the remaining egg whites with a spatula.

Spoon the mousse into ramekins and refrigerate for at least 3 hours before serving.
