Ingredients

1hr +
2-6 servings
  • 1whole chicken or 4 chicken breasts
  • 200 mlshot water from the kettle
  • 2-3large potatoes sliced
  • 4large tomatoes
  • Green peppers to garnish on top
  • Tomato paste - 1 soup spoon
  • Herbs
  • Basil
  • Thyme
  • Rosemary
  • Cumin
  • Red chilli flakes
  • Sweet paprika powder
  • Black pepper
  • Olive oil

    Cut whole chicken into sections or use breasts. Make scores in the chickens (small slices) so that herbs can get inside.

    In a bowl mix all the herbs evenly then add your chicken. Massage all the herbs into chickens for a good few minutes.

  3. 3

    Whilst your chickens are absorbing flavours, slice your tomatoes and potatoes. Leave your green peppers whole.

  4. 4

    Put a spoon of olive oil on a oven tray and brush it all over the base.

  5. 5

    Start adding your potatoes layer by layer. On top of that add your tomatoes evenly.

  6. 6

    In a cup or mug add 200mls of boiled water with your tomato paste and stir until tomato paste is completely melted into the liquid.

  7. 7

    Pre- heat your oven to 230c.

  8. 8

    Add your chickens evenly spread over your potatoes then sprinkle any of the leftover herbs over the potatoes and tomatoes.

  9. 9

    Pour the tomato mix over your chickens and make sure that it's covering your potatoes. Add more water if you need to at this stage.

  10. 10

    Lastly add your peppers. They will burn some but they are meant to. It adds to the flavours ! Put the oven dish at the centre of the oven and leave on 230 c for the first 20 mins. Then reduce the heat to 190c. Keep cooking until it's all cooked. Turn your chickens half way through your timing.

In the past 10 years I began a vegetarian diet & learned that I have stomach problems which gave me a lot of reflux & swelling. So in the past year I have become Vegan & gluten free.I will post non vegan and glutenous recipes too as my husband is very much an all in eater. Meat and gluten is everything to him 😂I have always loved cooking ever since I left home at 17.I love baking even more so.

This sounds really good. How much of the herbs and spice in total do you think we’d need? A few tablespoons?
