Wash the chicken, transfer to a pressure cooker, and add two tablespoon of Soy Sauce and some Salt

To this, add some freshly ground ginger, garlic and chilli (can use the mixer for about 20 seconds)

Add enough water for the chicken to cook, cover and let it cook for about 10-12 minutes, till the chicken is cooked properly

In a kadai, heat some oil and fry the red Chillies. Be careful to just lightly fry, and that the chilies don't turn crispy and crumble away.

Tear the Chillies in the middle and remove the seeds. If you like spicy food, leave it in as per your choice.

Transfer this de-seeded Chillies into a mixer, add two tablespoon of vinegar, a tiny amount of water and then grind it into a smooth paste.

In a kadai, add some oil and saute the diced onions till golden brown, on high flame. If using the Celery or Capsicum, add at this point and saute for some time. Add the chilli paste to the onions (can use water and clean the mixer vessel and add that also to the kadai).

Transfer the cooked chicken to the kadai, with the residual water. Add 2-3 tablespoons of Tomato Ketchup, stir nicely. Gravy tends to thicken once it cools down, so leave it a bit watery.

Add a pinch of sugar, a pinch of pepper, stir nicely. Add salt as required, cover it and let it saute for about 5-7 minutes. Easy Chilli chicken is ready!
