Whole Roasted Tandoori Cauliflower

Whole roasted cauliflower is a very popular dish in the western countries as it is a great vegetarian alternative to any roast meat for special occasions or holiday season. It is served as a main dish for vegetarians or side dish for non vegetarians. Whole cauliflower can be roasted in many ways with different spices and ingredients. Tandoori style whole roasted cauliflower is full of flavour. It really tastes delicious with the the sauce served with it. It can be served as a side dish or starter with some cucumber raita or it can be even added into a gravy and served with paratha or rice. Tandoori cauliflower is equally delicious in wraps served with minty yoghurt dip and tandoori mayonnaise.

Clean cauliflower and remove stalks keeping the head intact. Pat it to dry.

Now take all the ingredients under marination in a big bowl and mix everything very well. Apply this marination on the the cauliflower properly with your hands. It can be even turned around and marination can be applied underneath. Leave it in a refrigerator for one hour or even you can even leave it overnight.

Put it on a greased baking tray and bake it in a preheated oven at 200 degree for 45 minutes. Big cauliflower will take more time than the smaller cauliflower. Take it out and let it cool down before use.

To make the sauce heat oil in a pan and add cumin seeds. Now add chopped onion and saute it until light brown in colour. Now add ginger and garlic paste and saute it for a minute. Now add turmeric, red chilli powder, garam masala, coriander cumin powder, sugar and salt. Mix everything very well.

Now add chopped tomatoes along with half a cup of water. Let everything cook until tomatoes are soft and the oil starts separating. Turn off the heat and let it cool down at room temperature.

Now take the onion tomato mixture into a mixer jar and blend it into a smooth paste. Take this sauce out in a bowl and add chopped coriander leaves. Keep it aside or in the refrigerator until use.

Whole roasted tandoori cauliflower can be served with prepared sauce or cucumber raita as a side dish or starter. It can be even added to the prepared gravy and served with roti, naan, paratha or rice. Roasted cauliflower can be even chopped into pieces and added to the wraps along with other vegetables. Wraps can be served with minty yoghurt dip and tandoori mayonnaise.
