Leche frita is a classic Spanish dessert—crispy and golden on the outside, dusted with sugar and cinnamon, and perfectly creamy inside.

Heat the milk with the sugar, setting aside one cup of milk in a separate bowl. Add the cornstarch and egg yolks to the reserved milk and blend until smooth.

Once the milk and sugar are hot (you can add a cinnamon stick if you like), pour in the cornstarch and egg yolk mixture. Whisk vigorously, and when the mixture thickens, spread it onto a tray to cool.

Once cooled, cut into pieces, coat each piece in flour and beaten egg, and fry in plenty of oil. Drain on paper towels. Sprinkle with sugar and cinnamon.
