Ingredients

3 servings
  1. For Stewing
  2. 1large onion
  3. 5sections garlic
  4. 5tomatoes
  5. 1medium to large eggplant
  6. 1medium to large green capsicum (hoho)
  7. 1 bunchdhania
  8. 2 cupsboiled green pigeon peas
  9. 1 cupboiled green maize
  10. 1 tablespoonTropical Heat ground cinamon
  11. To tastesalt
  12. 2 tablespoonsoil
  13. For Refrying
  14. 1 teaspoongarlic powder
  15. 1 tablespoonTropical Heat curry powder
  16. 1 teaspoonwhite pepper
  17. 1 tablespoonfermented cream
  18. 1 tablespoonfermented milk
  19. 2 tablespoonsoil
  20. To correct seasoning salt

Steps

1.5 hrs
  1. 1

    For stewing, suet the onions and garlic in oil until translucent.

  2. 2

    Add tomatoes and cook until they break down.

  3. 3

    Add cinamon, salt, and water to cover and bring to boil.

  4. 4

    Add the pigeon peas and maize and cook until thick.

  5. 5

    Add cubed eggplant and cook for a few minutes until cooked.

  6. 6

    Switch off heat, mix in the dhania and hoho and let steam for a few minutes.

  7. 7

    For refrying, heat the oil, add in the githeri and stir fry for a few minutes.

  8. 8

    Add the spices and correct the seasoning. Stir fry until the spices are cooked.

  9. 9

    Add the fermented cream and fermented milk and bring to heat.

  10. 10

    Enjoy.
