For my journey with Cookpad, I made a dish featuring one of my city’s typical products: sweet Primitivo wine (18% ABV).

Mix the flour with the wine, gradually adding the water. Knead well until you have a smooth, even dough. Let it rest for about 10 minutes.

On a floured surface, shape the dough into orecchiette. For a tutorial, you can watch the pasta-making video from the Puglian pasta school on Cookpad Italia.

Make the sauce by sautéing the chopped shallot with the ground beef in olive oil. Deglaze with the wine.

Once the wine has evaporated, add the tomato paste. Stir in the spices and 1/2 cup water. The sauce will be ready in a few minutes.

Boil and drain the orecchiette. Toss them in the sauce, adding some pasta cooking water if needed.

Serve with grated pecorino or cacioricotta cheese.
