Wash the chicken well.

Add 1 tablespoon oil, tomato sauce, soya sauce, vinegar, salt, black pepper and mix well.

Keep aside 30 minutes for marination.

Heat a kadhai and add 1 tablespoon oil. Keep the flame low. Add marinated chicken pieces.

Cook for 3 to 4 minutes. Turn and cook another side for another 3 to 4 minutes.

Remember to keep the flame low while cooking or else the chicken won't get the soft and juicy texture.

Check with a fork whether the chicken is done or not. Once done remove from the kadhai and shred the chicken nicely.

Take two eggs in a bowl add salt as per taste. Beat well.

Add 1/2 cup chopped onions and beat well again untill it's nicely aerated and forms froth at top.

Heat kadhai again. Add 1 tablespoon oil. Spread the beaten egg in the kadhai. Cook for a minute.

Add the cooked and shredded chicken over the egg.

Add cheese generously.

Wait for a minute and fold.

Enjoy the Omelette with cheese and juicy chicken inside. Spread some grated cheese at the top. Serve hot.
