There's a dieting adage that goes something like this: God created the salad, but the Devil invented the dressing. Meaning that, as healthy as a salad can be, the wrong dressing can turn it into a fattening calorie bomb...

Most commercially available dressings have something “devilish” to them, so in the next few posts I’ll be sharing some of my “antidotes”: traditional dressings that have all the goodness without most of the unhealthy stuff!

Today, the classic French dressing. This one can be made with olive oil, but to my taste, a more neutral oil works better, such as rapeseed or even sunflower...

Ingredients

5 minutes
  • 3/4 cupoil
  • 1/4 cupwhite wine vinegar
  • 1/4 cupketchup (organic, if possible)
  • 2 tbspbrown or turbinado sugar
  • 1 tspWorcestershire sauce
  • 1garlic clove, pressed

Steps

5 minutes
  1. 1

    Combine all ingredients in an airtight jar, screw the lid on tight and dance the conga with it! It should emulsify nicely and give you a dark-orange thick fluid which will make any lettuce go "oh la lá"!

    Refrigerate until used, shake it vigorously if necessary before serving.

Sounds yummy
but all the sweetness of ketchup and sugar don’t sound either god-like or French , have you been hired by the devil maybe ?
