Ingredients

Serves 4 servings
  1. 1.1 lbsmutton (about 500 grams)
  2. as neededOil,
  3. 1 tablespoonmixed garam masala
  4. Salt, to taste
  5. 1 tablespoonchili powder
  6. 1/2 tablespoonturmeric
  7. 1 tablespooncoriander powder
  8. 1 tablespoongarlic, peeled
  9. 1-inch piece ginger
  10. 4onions (2 for frying, 2 for making a paste)
  11. 1/4 teaspoonground garam masala
  12. as neededWater,
  13. 3-4whole dried red chilies
  14. Cilantro, as needed, for garnish
  15. 1-2green chilies
  16. 1 bowlplain yogurt (about 1 cup/240 ml)

    First, clean and wash the mutton. In a blender, make a paste of garlic, ginger, green chilies, dried red chilies, and 2 onions. Heat oil in a pressure cooker over medium heat. Add whole garam masala, let it sizzle, then add the sliced onions and fry. Add the mutton and stir well.

    After 2-3 minutes, add the garlic-ginger paste to the mutton and sauté for 5 minutes. Once the paste is cooked, add all the powdered spices and sauté for 10 minutes, stirring. Add water if needed.

    When the mutton is more than halfway cooked, add the yogurt and cook on medium heat for another 5 minutes. Then cover and let it cook. When the water has evaporated and the mutton is fully cooked, turn off the heat. Place the mutton in a serving dish and garnish with cilantro. Serve hot with roti or as a snack.

    This is a very simple and delicious mutton dish. It is cooked thoroughly with all the spices and kept dry without any gravy, which is why it's called Sukha Mutton. Make sure to sauté the mutton well with the spices.
