Yummy and tasty carrot rice

Take a deep pan and add water.

Boil the water and add the washed basmati rice and salt and whole spices

Squeeze the juice of half a lemon in the water and let the rice cook fully.

Turn off the stove strain the rice and keep it aside.

In a kadai add ghee add fennel seeds, cumin seed, onion, green chilli, cashew nuts.

Add the pound ginger and garlic paste

Peel off the skin and grate fresh turmeric into the kadai

Add the grated carrot add salt once the carrot is half cooked

Add cumin powder, garam masala, chili powder

Close the kadai with lid and cook the carrot on medium low flame for 10 minutes

Add coriander leaves and give it quick mix

Add the cooked rice and gently mix everything add ghee

Serve the carrot rice hot with boondi or onion raita
