Ingredients

8-10 minutes
2 servings
  1. 2 (8 oz)steaks 1 1/2 thick, silver skin & most fat removed
  2. 2 tspNon-iodized salt
  3. Marinade:
  4. 2 tbsVirgin olive oil
  5. 1 tspRosemary
  6. 1/2 tspgarlic powder
  7. 1/2 tsponion powder
  8. Butter sauce:
  9. 3 tbssalt free butter
  10. 3 tbssoy sauce or Tamari (reduced sodium) soy sauce
  11. 3 tbsbrown sugar

Cooking Instructions

8-10 minutes

    Submerge deer or elk in cold salt water in fridge for 1 hour. (Not required for beef).

    Rinse in cold water, drain, & blot dry on paper towels

  3. 3

    Sprinkle marinade ingredients on steaks. Cover and refrigerate steaks 1 hour. (This aids in absorption of the spices & oil).

    Allow steaks to warm to room temperature for 45 minutes.

  5. 5

    Wipe or spray grill with olive oil. Sear steaks 2 minutes per side on high.

  6. 6

    Reduce heat to medium. Cook 2 more minutes per side for Medium rare, basting each side with butter sauce the last minute.

  7. 7

    Remove, lightly baste, and let stand 5 minutes on a warm plate before cutting
