Aitor said to me, "I want soup!" and we didn't have much of the traditional ingredients we usually use for soup, like chicken carcasses, leeks, parsnips, etc.

Still, I thought, let's see what we have and how I can make a broth. I looked in the fridge and found some carrots, some green beans, and the best part! A tray of two boneless chicken thighs that were originally going to be dinner that night 😄

I cooked this recipe, and with it, I encourage you to make chicken soup with whatever chicken you have at home, whether it's bones, thighs, wings... Whatever! And the good thing is that all the vegetables you have in the fridge or pantry work well :)

Ingredients

  2. 2 clovesgarlic
  3. 3-4carrots
  4. 1 handfulround green beans
  5. 5-6 quartswater (approximately)
  6. 1/2 cubechicken bouillon
  7. Salt
  8. Extra virgin olive oil

Cooking Instructions

    Prepare the chicken; in this case, I used two pieces of chicken thigh. First, in a pot, add a splash of olive oil and the whole garlic cloves with the skin on. Sauté until you smell the garlic, then add the chicken.

    Now cook the chicken on both sides and add the vegetables. Sauté everything together for a while. Add hot water until everything is well covered, and bring this water to a boil. Add a tablespoon of salt and the half chicken bouillon cube, slightly crumbled. Cook for half an hour on medium-high heat, and an hour and a half on low heat.

    When it's done, separate the chicken and vegetables. Shred the chicken once it's a bit cooler. For the soup
