First prepare your rice and set aside

Dice all the capsicum into small cubes. Dice the onion too

In a cooking pot or sufuria add 2 tbspns of cooking oil. Add the sliced onion and stir for 1 min. Add the capsicum and stir for a few minutes. We need them crunchy.

One they are ready add them to the rice and stir to mix well. Plate and serve with stew
