Pumpkin Peel Chips

As part of the #DontThrowItAway campaign, I found this interesting recipe from Irene-Guirao of Spain.

My mother-in-law gave me half a pumpkin (which was still quite large!) and it was a great opportunity. Pumpkin is one of those vegetables where you can use every part and not waste anything.
These chips have a flavor similar to oven-baked "fries". It also depends on the spices you use. They pair perfectly with yogurt.

Bake the pumpkin following the recipe https://cookpad.wasmer.app/gr/sintages/3464784-poures-poltos-kolokuthas. Essentially, bake the whole pumpkin until it softens. It's a good idea to cover it with aluminum foil to prevent the surface from drying out. Store the puree in the fridge or freezer and use it in any recipe you like.

Remove the flesh from the pumpkin until only the peel remains (leave a little flesh on. I think I left less than I should have; the pieces with a bit more were tastier).

Cut the peel into small pieces. Place them in a bowl, add the spices and a little oil, and mix to coat evenly.

Spread them on a baking sheet lined with parchment paper (I used the same one I baked the pumpkin on). Bake at 400°F for 25-30 minutes, depending on your oven. Check them occasionally and give them a stir if needed.

Serve with yogurt. It's a super snack!
