Ingredients

3-4 servings
  • 250 gdeep fried omena
  • 6 piecespitted green olives (pickled)
  • 6 piecespitted black olives (pickled)
  • 2 tablespoonspickled capers
  • 5large sections local garlic
  • Bunchgarlic chives
  • BunchItalian parsley
  • Bunchbasil
  • Buncharugula (rocket)
  • 4eggplants
  • 10okra
  • 4 tablespoonsvegetable cooking oil
  • To tastesalt (careful, the pickles are salty!)

Steps

  1. 1

    Chop the garlic and pickles and suet them in the oil.

  2. 2

    Roughly chop the eggplants and okra and add to the pot. Deglace with water. Let cook until vegetables start to break down.

  3. 3

    Add omena and cook until it softens.

  4. 4

    Now chop all the herbs, add to stew, and let to heat through. Turn off the heat and correct seasoning. Let steam for a few minutes.

  5. 5

    Serve with ugali and thank me later.
