Heat 1 tbsp oil. Fry semolina till it is light brown in colour

In the same Kadai. Add 2 tbsp oil. Fry 1/2 tsp mustard seeds, 1 dry red chilli and few curry leaves. Add 1 chopped onion fry till it is light brown in colour. Then add 1/2 grated carrot and crushed ginger. Saute it for few minutes

Add 1 glass lukewarm water. Add red chilli powder and cumin powder and salt.

Cover and cook for few minutes. Add fried semolina. Mix.............well. Till it is dry. Once it is done. Garnish with chopped coriander leaves.

Transfer to a serving plate. Immediately serve hot carrot upma with spicy coriander chutney.
