Low fat basil pesto

I needed a #lowfat version so I made this. It uses pecans instead of pine nuts and much less olive oil than normal.

It makes almost three cups and has about 10 grams of fat per 1/4 cup serving. Compared to about 30 grams (Kroger, Kirkland brands) this is pretty good.

Ingredients

30 minutes
10 servings
  1. 2.5 cupspacked fresh basil
  2. 1 cuppecans, soaked in water overnight or in hot water for at least 1 hour
  3. 1/2 cupparmesan cheese
  4. 3/4-1 cupwater
  5. 1/2 teaspoonolive oil
  6. 1/2 teaspoongarlic powder
  7. 1/4 teaspoonsalt
  8. Freshly ground black pepper to taste

Cooking Instructions

    Preheat oven to 250 degrees F. Drain pecans of the soaking water, lay them out on a silicone baking mat and roast for about 20-25 minutes until toasty but not burned.

    Add all ingredients to a food processor and run it until ingredients are incorporated. Add enough water so it forms a paste. You’re done. Enjoy your basil pesto.
