Beat the eggs well then add in the sugar and beat until paler in colour

Add the flour, milk, oil, lemon zest and cinnamon. And whisk until smooth

Cover the bottom of the pan in a very thin layer of oil. And fry them on a medium heat. When they look cooked flip them over then place them onto a plate. Serve with whatever you prefer and enjoy!
