Measure and cut all the ingredients for the recipe. In a skillet, heat the oil over medium heat and fry the potatoes until golden and cooked through.

Remove excess oil and add the onion, garlic, bell pepper, sausages, salt, and pepper. Cook until the onion and peppers are slightly golden. Transfer the mixture to a deep bowl, stir in the beaten eggs and parsley. Clean the skillet well and heat with a little olive oil. Add the omelet mixture, gently stir the eggs so they set, and brown slightly. Place a plate over the skillet, flip the omelet onto the plate, then return it to the skillet to finish cooking.
