Ingredients

  1. 1 headCauliflower, florets separated into bite-sized pcs
  2. 1 tspcumin
  3. 1 tspSmoked Paprika
  4. 1 tspGround Garlic
  5. 1 CupCos lettuce - shredded
  6. 1 CupMesculin- shredded
  7. 2 Tbspcrumbled feta
  8. 1 Tbspdried cranberries
  9. 1/2cucumber, seeds removed and diced
  10. 4Gherkins diced
  11. Handfulwalnuts roughly chopped
  12. 1/4 cupfinely chopped red onion
  13. 2 Tbspfinely shredded basil

Cooking Instructions

    In a mixing bowl, coat the cauliflower florets with the cumin, garlic and paprika, add 1 tbsp olive oil and toss to coat well. Roast in a preheated oven till tender about 30min. Set aside.

    Layer the salad ingredients, top with the cooked cauliflower. Sprinkle some feta and basil over the top. Enjoy!
