Pad Thai is the most popular & commonest street food dishes in the nooks & corners of the street side eateries in the land…
However, this particular dish has been typically explored to be westernised and likely we’ve our own Indo-Thai version too, as the outcomes of such specifically recreated fusions !!!

In the Thai language ‘Pad’ itself translates to the Noodles, like ‘Khao’ translates to Rice, ‘Gai’ to the Chicken, ‘Nam Pla’ refers to the Fish Sauce, etc.
I seriously don’t get it right- Why we Indians term it as the ‘Pad Thai Noodles’ which is simply translates as ‘Noodles Thai Noodles’…..?!
However, this common mistake alike us- I’ve not come across to be made by any other European Countries, even when they do have their own Fusion Dishes on certain Recipes from the land!

This one’s one such…Would request to try this out for sure

Ingredients

  • 250-300gms. Pad Thai Rice Noodles Sticks
  • To Taste Salt
  • 1.5-2 CupsAssorted Veggies & Greens (Anything of your choice- I’ve used my own)
  • 1Onion: Big & Finely Chopped
  • 2Garlic Cloves: Roughly Chopped
  • 1/4 CupCarrots: Finely Chopped
  • 1/4 CupBaby Corns: Sliced Medium-Thin & Angular
  • 2 tbspsSpring Onions: Both the Chives & the Scallions
  • 1/4 CupFresh Shrimps
  • 1-2Whole Eggs
  • 1 tbspDry Roasted Peanuts: Roughly Pounded
  • 2 tbspsPalm/Brown Sugar
  • 1 tbspLight Soy Sauce
  • 1/2 tbspDar Soy Sauce
  • 1 tbspAchari Masala: Homemade (I’ve used)
  • 2 tbspsSpring Onions: Finely Chopped- Both its chives & the scallions
  • 1/4 CupBean Sprouts: If available (I didn’t since, not having it right then)
  • as per required Garnish: Your own way

Steps

    First Up: We need to work on this Pad Thai Rice Noodles first-
    Soak it in the boiling hot water for about 7-8 mins time (Following the instructions behind the back of your noodles packet is always very imp. As it differs from one to the other)-
    Post the given time, take out by straining it nicely and rinse with some cold running water (drinkable though) & apply some oil to it, to avoid sticking with each other

    Get rest other ingredients ready & handy to begin with our cooking process further-
    Heat up a frying pan over the medium-high flame, add in the aforesaid cooking oil to it & one by one drop in all the cut ups into it (chopped veggies and herbs), sauté until translucent & a bit reduced in its original quantity

    Once well sautéed, add in the shrimps or even chicken (if using it), mix everything well together until nicely combined and well blended-
    Now, here comes the main twist of the recipe-
    Instead of using the Thai spices & herbs, as ideally we’re supposed to do in any Pad Thai preparations, we’re using our very own Indian Achari or Achar ka Masala-
    Stirring nicely to help it get well incorporated

    Now, throw in the Properly puffed up Pad Thai into the sautéed & spiced up veggies, mixing everything well together- Add in the sauces mentioned above-
    At this point- keeping the noodles stuffs at one side of the pan- You can either drop in the whole egg in it to scramble there itself & mix everything well together nicely…

    Alternatively, you can do the egg scramble separately in a different pan & then mix it with the rest of the noodles that’s already cooked now-
    Give it all a really quick toss to ensure everything is well coated, nicely incorporated & perfectly cooked for sure-
    Time to plate it out & simply Relish the DELISH
