First apply lil bit of oil to the brinjals and then roast then peel the brinjals and wash it with water after that take a pan add oil and when oil is hot add onion, ginger garlic green chillies will be added when the onoion is half cooked after that add salt turmeric powder red chilli powder garam masala and tomatoes

And cook until tomatoes are soft then add meshed (chopped) brinjals and cook it and lastly add kasuri methi and serve with chapati or roti

Tip: you can also roast tomatoes if you like and if you don't like roast brinjal smell you can boil the brinjals
