Ingredients

  1. 2.2 lbsbeef for shredding (about 1 kg)
  2. 1.1 lbsbeef short ribs (about 500 g)
  3. 1/2 cupvinegar (120 ml)
  4. 1onion
  5. 4garlic cloves
  6. 4whole cloves
  7. 4whole black peppercorns
  8. 1/2 teaspoondried oregano
  9. 1/2 teaspoondried thyme
  10. 1/2 teaspoonground cumin
  11. 3bay leaves
  12. 1small piece fresh ginger or 1/2 teaspoon ground ginger
  13. salt to taste
  14. 1beef bouillon cube
  15. 1dried morita chile
  16. 3dried guajillo chiles
  17. 3dried ancho chiles

Cooking Instructions

    In a skillet with a little oil, fry all the chiles. Then add water and boil for about 5 minutes or until they are soft.

    Blend the spices with 1/4 of the onion, vinegar, and the chiles until smooth.

    In a large bowl or the pot where you'll cook the meat, add the marinade to the meat and let it marinate overnight or at least 4 hours.

    The next day, cook the meat for about 3 hours or until very tender, then shred it.

    For the broth, just chop some onion and cilantro, add to the broth, and let it simmer for 5 more minutes.

    Lightly fry the tortillas in pork lard and add a little of the broth.
