Pan-fry the pre-made fish cakes until both sides are golden and cooked through. Boil the shrimp until done, then peel them.

Rinse the chicken bones with salt and a little rice wine. Simmer the bones with a few slices of ginger, seasoning lightly at first. Once the bones are tender, remove them and adjust the seasoning to taste.

Bring a pot of water to a boil and briefly blanch the banh canh noodles. Then add the noodles to the broth so they absorb the flavor. To serve, place the noodles in bowls, top with sliced fish cake, shrimp, chopped garlic chives, and black pepper. Serve with a side of spicy chili fish sauce for dipping. Enjoy!
